It’s finally here! My all time favorite simple turkey taco recipe. I am so excited to share it with you guys. It’s a staple dish here in the Reto household. This healthy turkey taco dish is made weekly.
What makes this dish is the taco filling it is SO flavorful and delish. Plus they are so easy to make. I personally like hard taco shells but if you prefer soft ones you could easily use those instead. For a store bought brand I like Siete tortilla shells. They are gluten free and have a minimal ingredient list. Simple, recognizable ingredients is the key without added gums, refined sugars and inflammatory oils. These check all of the boxes.

ALL YOU NEED:
ground turkey
red onion
yellow onion
bell pepper
tomato
chili powder
smoked paprika
taco shells
That’s it! Only 5 ingredients. The perfect simplistic taco dish.
Ok so another key part to making this dish so good is the slightly crispy taco shell. Who doesn’t love a crispy shell? It’s all about the crunch in my opinion. I am obsessed. During my pregnancy with Charlotte one of the foods I loved most was tacos. Not just any taco though. Specifically homemade ones. Ever since I have found a new love and appreciation for a quality taco. These shells quickly bake at 350 degrees for about 3-5 minutes. That way you are guaranteed crispy but not burnt taco shells every single time. Just add your toppings (or don’t) preferably salsa (recipe coming soon!) or some avocado and you’re all set!
Oh and an extra bonus the taco filling is filled with veggies, fiber and protein.

TURKEY TACOS
Prep time: 20 minutes
Cook time: 1 hour
Total time: 1 hour 20 minutes

For the taco filling:
1lb ground turkey
1 red onion
1 yellow onion
2 bell peppers
2 large tomatoes
2 tbsp chili powder
1.5 tsp smoked paprika
(spice amounts can be adjusted to preference)
tortillas:
(cassava flour, almond flour are great options!)
Optional toppings: avocado, sliced mango, cilantro, lettuce, cheese (if not dairy-free), salsa

INSTRUCTIONS:
Put your ground turkey into a sautéing pan (for this recipe I use a 3QT pan) under low-medium heat . Dice the onions, peppers, tomatoes and add into the same pan.
Next add in chili powder and smoked paprika. Cook until vegetables reduce and there is no liquid left in the pan. (this takes about 45 minutes to 60 minutes) The higher the heat the less time it will take to cook but the more often you will have to stir. I keep it on low to medium heat the entire time.
Helpful Tip! The longer you cook it the better it will come out. Make sure the vegetables fully reduce and that there is no liquid left in the pan. If the taco filling is to liquidity the shells will be soggy not crispy. Once the filling is done turn off the stove and let it cool while you prepare the taco shells.
SHELLS:
I put them in the oven at 350 degrees for about five minutes until they are slightly toasted brown on a baking sheet. Stand the shells (if using hard taco shells) upright so they keep their form. Lastly, make your taco, serve and enjoy!
